You really can't get any fresher than fresh!  I met with free-run poultry farmer Ryan Zimmerling today to pick up 10 of his finest chickens that were just processed yesterday. As you will see over time, I tend to gravitate toward simple treatments when I am responsible for making the meal. The beauty of that approach is that meals with few ingredients let each flavour shine. Spring vegetables are perfect for this type of treatment – asparagus, tender greens, crisp radishes, and early cucumbers. Who knew??  Juniper is a trending flavour!! The LCBO's Food & Drink mag (Early Summer 2017) is featuring Juniper in one of their articles, this edition!  Juniper is fascinating.  In the LiCkBO mag, they are using it in a sweet context.  I usually use it for savories.   The berries of the plant are the flavouring agent in gin.  If you love gin, you'll love using Juniper.  If you don't like gin, however, don't let that turn you off; I'm not a gin fan at all...!  Juniper is woodsy and delicious and complex.  I'm obsessed with it and how I'm going...

Had the most fantastic time over the weekend, creating delicious and beautiful food to be photographed by super-fun John Wenzel.  Although the thought of making 8 main courses to plate was a little overwhelming, it all came together and looked as lovely as it tasted!
